Deviled Egg Chicks

We are slightly obsessed with deviled eggs in this house. For any holiday or occasion, I will always incorporate deviled eggs in the spread and add a different random festive touch. I grew up with deviled eggs being a staple at family events and the legacy has clearly been carried down to my family. I remember my dad would make the most amazing egg salad sandwiches and those random sandwiches made me so happy. It’s funny how I feel like I’m surrounded by people who clearly love eggs. I remember when my husband added boiled eggs to our spaghetti dinner one night and I lost my mind. Y’all don’t knock it till you try it… that was so delish!

You would think that I would be a pro at boiling eggs since we cook them so often, but it is literally a foreign concept for me. I have tried everything under the sun to “boil” the perfect egg. I either under cook them or severely over cook them. Trust me…. I have searched Pinterest for hours trying to find the perfect way to boil eggs! I was venting to my mother-in-law one day about my “boiled egg” problem and she surprised me with the coolest gadget. A BOILED EGG COOKER MACHINE! I didn’t realize at the time how much this little guy would become my best friend [EGG COOKER LINKED]. This little cutie will not only boil eggs but will also poach eggs and do omelets! I haven’t tried the poaching and omelet features yet. If you do, please share your thoughts!

So when it is time for the holidays and festivities I bust out my handy dandy little egg cooker, boil some eggs and make my famous deviled eggs. I have a secret ingredient that I have never tasted or seen in any other boiled egg recipe….. apple cider vinegar. It adds a unique zesty kick to the egg mixture. Most people that try my deviled eggs don’t believe that I add ACV, but that is my secret. There you have it!

For Easter this year I wanted to do something a little fun and I had so much fun creating this recipe. These little chick deviled eggs are going to be the perfect addition at our Easter Celebration spread. I think the kids will really appreciate this one as well, it’s so cute and fun!

This serving board is one of my favorites. If you have read a few of my blogs you have seen it A LOT. It is food safe and under $16. [BOARD LINKED] I did add kale to the board for some color and texture. Small leaves of Parsley would also be perfect. When it comes to entertaining or bringing a dish to an event, the little deviled egg chicks have all the little details that people love.

Deviled Egg Chicks

Instructions

  1. Place boiled and peeled egg on a cutting board on its side. Make two cuts. 1. Thin cut on bottom so egg will sit flat. 2. Cut about 3/4 up from the bottom cut creating a lid for the egg. Repeat with all eggs. Save the lid of the egg.
  2. Once lid is cut, carefully remove yolks and place them in a separate bowl. If you gently squeeze the egg the yolk should pop right out, if not a toothpick works. Put all yolks into a bowl.
  3. In the bowl with the yolks, mix all the ingredients to create the deviled egg inside mixture. Mix until smooth.
  4. Put your yolk mixture into a ziplock bag and cut the bottom corner of the bag. This makes it so much easier to add the mixture into the inside of each egg. Fill each egg beyond the brim. Add the lid back on.
  5. Cut olives into small little rectangles for eyes. Cut your carrot into small triangles for the nose. Add the eyes and mouth to the chicks.
  6. Chill then serve.
