Mini Carrot Peppers (The Perfect Easter Appetizer)

Do you remember the trend during quarantine where you put cream cheese on mini bell peppers with everything bagel seasoning? This recipe is inspired by that! Me and my little one LOVE cream cheese and make any excuse to eat it. I wanted to create something fun and festive for Easter with a splash of “healthy” to it and this was it!

Family gatherings are the perfect place to show off your extra-ness and have fun with the everyday simple dishes! Appetizers are something that is easy to bring to a pot luck or family gathering so why not show up with a statement dish. When we have our family gatherings we are asked to bring a dish so no one is expected to feed the whole family. I personally love it and I use it as an opportunity to get creative. So, depending on the event I will bring a festive appetizer!

Ingredients for “Carrots”

  • Cream Cheese Filling

Instructions

  1. Wash your peppers
  2. Cut the stem of the pepper off, then cut the pepper in half. Once halved, remove seeds or white ribs if you prefer
  3. Mix all the “cream cheese filling” together in a bowl and mix until well blended
  4. Using a spoon, as best you can, neatly spoon the cream cheese mixture into the pepper. I wiped the edges of the pepper so you could see the orange when it lays flat and it gives the look of a carrot.
  5. Add a few of the dill stems to the top of the pepper. Just push into the cream cheese mixture.
  6. Chill until ready to serve.
