Summer Salsa Recipe

Summer is officially among us and I’m so here for the yummy summer foods, especially an easy recipe. I love a recipe that is not only “Festive” but delicious. Salsa out of a pineapple is the perfect festive touch for summer. My family’s favorite food is Mexican food, so we enjoyed this recipe and we loved the incorporation of the fruit. I feel like that’s what makes this Summer salsa recipe unique. Below your will find full step by step instructions and a video tutorial.

My Summer Salsa recipe is so easy and great for those that don’t love to cook. It is perfect for any summer party. A good way to spice it up to have more of a kick is to add the jalapeños seeds. I used my favorite Wood Board for the perfect set up. I cannot wait to use this recipe for our next summer gathering. I actually made it for us on Mother’s Day and we enjoyed it by the pool. We had the perfect vibe with this salsa and Bob Marley playing in the background to set the mood.

I mixed the salsa up in a bowl before putting it into the pineapple. You don’t need to use any particular type of bowl, I just used my favorite Glass bowls that I use all the time for salads, baking or mixing. Also, I know I will get asked, so here is the link for my black measuring cups. I’ve had these for probably 3 years and own about 2 sets. I LOVE them.

Ingredients

Instructions for Pineapple Bowl

  1. Cut 1/3 of the pineapple. Do not cut the stem- leave that fully intact.
  2. Cut out the insides of the pineapple out creating a bowl for the salsa mixture. And dump out any juice inside the pineapple.
  3. Instructions for Salsa

  4. Dice up (pineapple, strawberries, red bell pepper, jalapeño, red onion and cilantro).
  5. Pour all the diced ingredients into a bowl.
  6. Add in lime juice and salt and pepper and mix.
  7. Add the salsa mixture to the pineapple bowl.
  8. Add the pineapple & tortilla chips to a platter.
  9. ENJOY!
