Happy Cinco de Mayo, friends! I hope your day is filled with sunshine, good vibes, and, of course, absolutely incredible food.

Let’s be real for a second: I haven’t had actual Taco Bell in 20 years. Two whole decades! It’s just not something I typically crave, and I definitely don’t need the drive-thru in my life. But today? Today, the idea of a classic, cheesy, crunchy fast-food taco just sounded really, really good. I wanted a fun splash for our Cinco de Mayo dinner, something that felt a little bit indulgent but still completely within my control in my own kitchen.

So, we decided to take matters into our own hands and create the ultimate at-home Taco Bell dupe: the Cheesy Gordita Crunch. Spoiler alert: It was completely out of this world, took less than 20 minutes, and I am entirely obsessed.

Nostalgia on a Plate: The Perfect Date Night Board

There is something deeply comforting about the fast food of our past. It brings back memories of late-night runs in high school, blasting pop music with the windows down, and just having zero cares in the world.

The Recipe: DIY Cheesy Gordita Crunch

The absolute joy of making these at home is the customization. You can load them up with whatever fresh toppings your heart desires! Here is exactly how we built ours to get that perfect, authentic flavor.

The Ingredients

  • 1 lb 85% Lean Ground Beef: Pro-tip: We actually cooked 2 pounds initially, and it was WAY too much food! One single pound of ground beef is completely plenty to feed a family of four. Save yourself the leftovers!
  • H-E-B Refried Charro Beans: These are the absolute stars of the show. We personally love these specific beans from H-E-B; the flavor is unmatched and they add the perfect hearty texture.
  • Soft Flour Tortillas: Regular, taco-sized tortillas.
  • Hard Taco Shells: You’ll need one for every taco you plan to make.
  • Shredded Cheese: A good Mexican blend or cheddar works beautifully.
  • Shredded Lettuce & Diced Tomatoes: For that fresh, crisp crunch on top.
  • The Secret Sauce Hacks: Frito Lay Cheese Dip and Guacamole! I am telling you, dipping your taco in that jarred Frito Lay cheese tastes exactly like Taco Bell. It is the ultimate hack for getting that signature flavor.
  • Optional Toppings: Salsa, sour cream, jalapeños—whatever makes you happy!

The Step-by-Step Assembly

  1. Brown the Beef: In a skillet over medium heat, brown your 85% ground beef with your favorite taco seasoning. Once cooked, set aside.
  2. Heat the Beans: Warm up those H-E-B refried charro beans in a small saucepan until they are nice and hot.
  3. The Cheese Melt (The Magic Step!): Take a regular-sized soft flour tortilla and sprinkle a generous layer of shredded cheese right in the center. Place it flat in a warm skillet. Warm the tortilla so the cheese gets perfectly gooey and melted. Using a lid will help melt the cheese.
  4. The Bind: Remove the cheesy soft tortilla from the skillet. Immediately take your hard taco shell and place it right in the center of the melted cheese. Fold the soft tortilla up around the hard shell—the melted cheese acts as the perfect glue, making the soft tortilla conform beautifully to the hard shell.
  5. Layer It Up: Now, build your masterpiece! Start with a warm layer of the refried charro beans at the bottom of the hard shell. Add a generous scoop of your seasoned ground beef.
  6. Top It Off: Pile high with shredded lettuce, fresh diced tomatoes, and an extra sprinkle of cheese on top.
  7. Dip and Enjoy: Serve immediately with your favorite salsa, sour cream, and a side of that Frito Lay cheese and guac for dipping.

Okay, so we just had an absolutely glorious, carb-loaded, cheese-tastic dinner. It was totally worth it, but if you’re feeling like you want a dessert that brings a little bit of balance to the evening, I’ve got you covered.

Instead of going heavy for dessert, we reached for our Chocolate Banana Almond Butter Bites.

Skip the drive-thru with this easy homemade Taco Bell Cheesy Gordita Crunch recipe. Featuring perfectly seasoned ground beef, a gooey melted cheese layer between a hard shell and soft flatbread. Ready in under 30 minutes!

Ingredients
  

  • 1 Lb Ground Beef 85%
  • 1 packet Taco Seasoning
  • 1 can Refried Charro Beans
  • 1 Lettuce Head or Package of shredded
  • 2 Roma Tomatoes
  • 1 Sour Cream
  • 1 Guacomole
  • 2 cups Mexican shredded Cheese
  • 1 jar Tostitos Salsa Con Queso
  • 10 Soft Tortillas
  • 10 Hard Taco shells

Instructions
 

  • 1.Brown the Beef: Brown the ground beef in a skillet over medium heat with taco seasoning and set it aside.
  • 2.Heat the Beans: Warm the refried charro beans in a small saucepan until they are hot and spreadable.
  • 3.The Cheese Melt: Place a soft flour tortilla in a warm skillet and sprinkle it with cheese until it is gooey and melted.* The cheese melts better with a lid.
  • 4.The Bind: Press a hard taco shell into the center of the melted cheese and fold the soft tortilla up around it to bond them together.
  • 5.Layer It Up: Spread a layer of warm beans inside the hard shell followed by a generous scoop of the seasoned beef.
  • 6.Top It Off: Pile the taco high with shredded lettuce, diced tomatoes, and an extra sprinkle of cheese.
  • 7.Dip and Enjoy: Serve your creation immediately with salsa, sour cream, and a side of cheese dip and guacamole.
