• 1 pack of chicken breast avg 2.85, thinly sliced into strips

• 2 red bell pepper, sliced

• 2 orange bell pepper, sliced

• 2 yellow bell pepper, sliced

• 1 purple onion, thinly sliced

• 2 tablespoons olive oil

• 2 teaspoons Slap Ya Mamas (season to taste)- adds a slight spice

• 2 tbsp taco seasoning (season to taste)

• 1 teaspoon salt

• 1 teaspoon pepper

Sides:

• 1 bag of Spanish-style cauliflower rice (I used H-E-B’s frozen version)- You can use any kind of rice- maybe even quinoa

• 1 can of black beans, rinsed and drained- opted for this instead of refried beans

• Corn tortillas (or your preferred tortillas)- we are watching our gluten intake currently

Toppings:

• Guacamole

• Fresh cilantro

• Lime wedges

• Hot sauce or salsa

• Shredded Cheese

1. Preheat Your Oven

Preheat your oven to 395°F.

2. Prep the Vegetables

Slice the bell peppers and onion into thin strips. Spread them evenly on the sheet pan.

3. Season the Chicken

Thinly slice the chicken breast and place it on the same sheet pan as the vegetables or another baking sheet if not enough room. This would be great oppoturinity to make more for meals for the week or lunch the following day. Drizzle olive oil over everything and sprinkle with the Slap Ya Mama, taco seasoning, salt, and black pepper. Toss the chicken and vegetables together to ensure everything is evenly coated with the seasoning. (I call this cooking with love- marinate the the goods honey)

4. Bake

Place the sheet pan in the oven and bake for 20 minutes, or until the chicken is fully cooked (165°F internal temperature) and the vegetables are tender.

5. Prepare the Sides

While the fajitas are baking, prepare the sides:

• Heat the frozen Spanish-style cauliflower rice according to the package instructions.

• Warm the black beans in a small pot over medium heat.

6. Warm the Tortillas

Heat the corn tortillas in a skillet, directly over the flame of a gas stove, or in the microwave. This step gives them a soft and pliable texture, perfect for wrapping your fajitas.
