Carrot Cheese Ball

Cheese balls!!! The amount of recipes that I’ve seen (or tried) for cheese balls is endless. All so delicious and all so creative! I am obsessed with how this Easter version cheese ball turned out! One way to be “extra” for any holiday season is by taking your favorite dish or treat and adding a little festive touch.

For this Easter version I did go with “Light” cream cheese and olive oil based mayonnaise to add a healthier touch. I know yummy recipes aren’t always the healthiest, but if you can make substitutions to make it healthier, DO IT! Another way to add a splash of healthiness is choosing healthy options to dip with. Of course everyone loves a yummy ritz cracker, but Simple Mills Ground Sea Salt Almond Flour Crackers is one of our favorite crackers that we can just eat out of the box. Obviously, carrots, celery or peppers are great dipping options as well.

I served the cheese ball on this wood board which is one of my favorites. Whether you use it as decor in your kitchen, create a breakfast board, simple afternoon school snack or festive treat this board is a must have. BOARD LINK It is food safe (of course) and it is the most beautiful natural wood grain color. I use it all the time and when not using it I have it leaning against my backsplash behind my Kitchen Aid.

CARROT CHEESE BALL

Ingredients

  • 2 – 8-oz packages light cream cheese, room temperature (easy to mix)
  • 3 stalks green onion chopped
  • 1 Tbsp. light mayonnaise or (I used olive oil based mayo)
  • 1 tsp. white vinegar
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. ground mustard
  • 1/2 tsp. garlic salt California seasoning blend
  • finely shredded cheddar cheese (yellow cheese to make it look like a carrot!)
  • bundle of parsley

Directions

  1. Mix all ingredients together in a mixing bowl. (Having the cheese at room temperature makes it much easier to mix)
  2. Form a large triangle in the shape of a carrot on a large plate or platter of your choice. (I found it was easier to put it in plastic wrap to mold it all together, see video).
  3. Push parsley bundle into the top of the cheese carrot so the greens create a FULL carrot look.
  4. Cover the cheese carrot with cheddar cheese and pat it down so it sticks to the cream cheese. The yellow cheese helps create the full CARROT LOOK.
  5. Serve with crackers and anything else yummy… celery, peppers, and/or carrots.

When it comes to family gatherings you will find me at the table with the food. There is nothing more rewarding than showing up to a party or an event and your homemade dish is the talk of the party. Hearing everyone rave about it and ask for the recipe is so fulfilling. If you love cream cheese you will LOVE this dish. Until I met my husband I didn’t’ know anyone who didn’t like cream cheese…. Buttttt… if your people are cream cheese lovers, they are guaranteed to LOVE this cheese ball!
